RECIPE: Chef Alejandro’s Chicken Soup

What could be more comforting in cold weather  – especially if you have the sniffles – than homemade, hearty chicken noodle soup?

Thinking of you, Chef Alejandro shares one of his fan-favorite recipes. Enjoy!

CHICKEN NOODLE SOUP RECIPE

Ingredients:
– 125grs Chopped chicken breast (Pechuga de pollo en trocitos)
– 300ml Chicken broth (Fondo de pollo)
– 20grs Diced onion (Cebolla picada)
– 10grs Diced sweet chili pepper (Chile dulce picado)
– 20grs Carrot sliced in small pieces (Zanahoria en trocitos)
– Crushed garlic to your taste (Ajo al gusto)
– 10grs Diced celery (Apio picado)
– 20grs Diced green beans (Vainica picada)
– 30grs Pre-cooked Spaghetti noodles (Spaguetti precocinada)
– Two (2) Chopped Coriander leaves (2 hojas de Culantro coyote picada)
– Salt and pepper to taste (Sal y pimienta al gusto)

Process:
– In a frying pan sauté the chopped chicken in order to seal it, add the onion, garlic, chili peppers, carrot, celery and green beans. Add the chicken broth and cook on medium heat for about 5 minutes.

– When the broth reaches the boiling point, add the pasta and the coriander.

– Salt and pepper to taste and it’s ready to serve!

Proceso:
– En un sartén sellar el pollo en trocitos, agregar la cebolla, el ajo, el chile, la zanahoria, el apio y la vainica. Agregar el fondo de pollo y cocinar por unos 5 minutos.

– En el momento que el fondo llega al punto de ebullición se debe agregar la pasta y el culantro.

– Añada sal y pimienta al gusto. Lista para servir.
